The first time I had a madeleine, it kind of blew my mind. I couldn’t believe how good it was. The best madeleines I’ve had were at Daniel, where was served with the dessert course, so I made sure to visit both Épicerie Boulud (a Daniel establishment), and Dominique Ansel Bakery (Dominique, the former executive pastry chef at Daniel).
#3: The madeleines at Épicerie Boulud are sold in prepackaged cellophane bag that contained two ($3.75). I like my madeleines to be a little crispy around the edges which provides a nice chew with the center being nice and fluffy, otherwise I could just be eating a pound cake. The flavor was nice and buttery with a hint of lemon, but it was missing that crispy edge I was looking for.

#2: Dusted lightly with powdered sugar, I made sure to get the ones in the baked goods section instead of the prepackaged individual ones at Bouchon Bakery. I really liked these madeleines ($2.50). Chewy on the outside, with and fluffy on the inside.

#1: The best of the three is, hands down, the made to order, freshly baked ones at Dominique Ansel. These mini madeleines are sold in pieces of 10 ($4.25) or 20 ($6.50). After placing an order, I waited about 5 minutes and saw them taken out of the oven and dusted with powdered sugar.
Be warned, wait a couple of minutes unless you want a burned tongue. Also, get there at least 30 minutes before they close to place an order. I learned both the hard way.
