Strawberry Mint Sparkling Tea

These fresh strawberries picked up from the farmer's market were so sweet on their own, no extra sugar was needed! I used mint tea from Le Palais des Thés. 

STRAWBERRY MINT SPARKLING TEA
Makes 2 cups

INGREDIENTS
2 cups strawberries
1 cup chilled sparkling or seltzer water (I used my SodaStream.)
1/2 cup water
1 teaspoon mint tea
mint leaves (optional)

DIRECTIONS
1. Bring 1/2 cup water to boil. Take off heat & steep for 3-5 minutes. Strain & let cool.
2. Remove stems & chop strawberries. Combine with mint tea in a blender. Blend until smooth.
3. Fill half a cup with strawberry puree. Top with sparkling water. Garnish with mint leaves. Enjoy!
