Cream Froth

Cream froth is lightly whipped cream with some sugar and salt that you can add to any tea drink. 

The key is to whip it until it just starts to thicken.

If you whip until you get peaks, you’ve over-whipped and the cream will just sit on top of the drink instead of lazily and gorgeously making its way down to the bottom of the cup. 

I use a handheld milk frother to whip the cream and it just takes a few seconds. Super easy and quick.

Is there caffeine in this drink?
Yes, there’s caffeine in Earl Grey.

I overwhipped the cream froth. How can I fix it so it’s pourable?
Add a teaspoon of heavy cream and stir to make it more liquid. Add more heavy cream, a teaspoon at a time, if needed.

Can I use loose tea instead of a tea sachet?
Yes! I used a tea sachet since it’s easier to clean up but loose tea is great to use for this recipe. In place of 1 tea sachet, use 2 teaspoons of loose tea Earl Grey or 2 tea bags.

Can I make this with cold brewed Earl Grey?
You can definitely make this drink with cold brewed tea but make a stronger brew (add a teaspoon more Earl Grey for each serving) since you don’t want to lose the Earl Grey flavor when it mixes with the heavy cream. 

Iced Earl Grey Tea Latte Tips

  • Don’t have an electric kettle? You can boil water on the stovetop.
  • If you don’t have a handheld milk frother, you can use a whisk to make the lightly whipped cream. It’ll just take a little longer.
  • Cold heavy cream will whip quicker. You can also put the container where you’ll be whipping the heavy cream into the refrigerator also to chill.

How to Make It

There are 2 parts to this drink that come together to make it delicious:

  • Earl Grey tea
  • Cream froth

Earl Grey iced tea

STEP 1: Boil water.

Boil water on the stovetop or in an electric kettle (set it to 208°F if yours has a temperature setting). You only need 1/4 cup so it shouldn’t take long to boil.

The better your water tastes, the better your tea will taste so I always use filtered water.

STEP 2: Combine tea sachet and hot water in a glass container.

Using a tea sachet means there’s very little cleanup and no loose tea to strain out.

STEP 3: Cover container and steep for 5 minutes.

STEP 4: Discard tea sachet and add cold water.

To the 1/4 cup of hot tea, add in 1/2 cup of cold water to cool the tea down.

STEP 5: Lightly whip heavy cream, sugar, and salt.

In a container, whip together heavy cream, sugar, salt using a handheld milk frother.

It takes about a minute to thicken. What you want is for it to thicken but not too thick that it doesn’t pour.

Tilt the cup a bit after frothing to see how thick it is. 

The aim is to have it still be liquid enough to slide down the cup slowly.

STEP 6: Pour tea into a cup with ice.

In a cup with ice, pour the tea, leaving room for the cream froth.

STEP 7: Pour cream froth on top.

With the ice and the fluffy cream froth, the cream topping will sit nicely on top creating a layered effect.

You’ll start to notice that the cream will slowly make its way down.

    1. Hi Callie, the Cream Froth recipe is at the bottom of the blog post where the complete recipe is. It’s 1/4 cup heavy cream, 1 tablespoon sugar, and 1/8 teaspoon salt.

    1. Hi Lynn, I’ve never tried making cream froth without the cream. I don’t know of anything else that can be whipped like cream unfortunately.
