They serve a wonderful fruity tea at the spa at the Mandarin Oriental and my friend Kelli loved it so much she contacted the spa manager to get the recipe. I adapted the recipe and used a fruit tea from Harney & Sons but this would also work well with any black tea.

FRESH FRUIT TEA

4 cups of water
2 tbsp of Happy Birthday Tea from Harney & Sons
1/2 mango, diced
1 stalk lemongrass, cut into small pieces
1 inch of fresh sliced ginger
2 slices of lime
2 slices of lemon
Optional: 2 tbsp of honey

Chop and dice the mango, lemongrass, and ginger into small pieces. Slice the lime and lemon. Boil water and combine all ingredients into the hot water. Steep for 15 – 30 minutes.
