What is Bubble Tea?

Bubble tea is an iced drink that was created in Taiwan in the 1980s. The most basic recipe is tea, milk, sugar, and tapioca balls.

The tapioca balls, which are known as boba, are why the drink is called bubble tea.

Any kind of tea can be used to make bubble tea but black tea is the most popular.

  • Jasmine green tea: Jasmine tea gives the drink a light floral scent and flavor. Tea sachets were used, but you can also use loose tea or tea bags.
  • Tapioca balls: They’re sold dried so you just need to cook them to make them plump and soft.
  • Sugar: Granulated white sugar was used but you can use any kind of sugar you have.
  • Whole milk: Any kind of milk can be used, but whole milk will make the drink creamier.
  • Water: Use filtered water if possible for a better tasting bubble tea.
  • Ice: Make ice using filtered water if you can.

Step-by-Step Instructions

Step 1: Steep tea in hot water.

Discard tea sachets. Stir sugar into the hot tea, and set aside to cool.

Step 2: Make tapioca balls. Follow directions on package but all that’s involved is cooking tapioca balls in hot water for a few minutes.

Step 3: Put tapioca balls into a cup. Add ice, tea, and milk. Assemble drink starting with the tapioca balls. Use an extra wide straw to drink.

Instructions 

MAKE TEA

  • Boil 1 cup of water.
    If using an electric kettle with a temperature setting, set the water to 175°F. Use filtered water if possible.
  • Steep tea sachets in hot water for 4 minutes.
  • Discard tea sachets and stir in sugar. Let tea cool.

MAKE TAPIOCA BALLS

  • Boil water and add tapioca balls.
    Boil water in a saucepan on the stovetop then add tapioca balls. Cook on medium-high heat for 8-10 minutes. Stir occasionally. Tapioca balls should be soft all the way through.
    (Follow directions on your tapioca ball packaging if you're using a different brand than the one I’m using.)
  • Strain tapioca balls.

ASSEMBLE DRINK

  • Put tapioca balls into a cup. Add ice, tea, and milk.
