Peach Iced Tea

Refreshing peach iced tea with Earl Grey and English breakfast tea.

Ingredients

Iced Tea

Peach Syrup

  • 1 ½ cups water
  • 1 ½ cups diced peaches
  • 2 tablespoons white sugar

Instructions

MAKE TEA

  • Boil water.
    Heat 2 cups filtered water to 190°F if using an electric kettle with a temperature setting. If heating water on the stovetop, bring water to a simmer then turn off heat and let cool a couple of minutes.
  • Put tea sachets into a pitcher and add hot water. Steep for 5 minutes.
  • Discard tea sachets and let tea cool.
    Set aside. Cool tea in refrigerator for about 30 minutes.

MAKE PEACH SYRUP

  • Blend diced peaches and 1 ½ cups of water in a mini blender.
    Dice the peaches so it blends quickly and evenly.
  • Heat peach puree and sugar on the stovetop.
    Bring it to a boil then lower heat and simmer for 5 minutes. Turn off heat.
  • Strain peach syrup. Let cool.
    Filter out solids using a mesh strainer.

ASSEMBLE DRINK

  • Combine peach syrup and tea.
    Both peach syrup and tea should be cooled down when combined.
  • Pour peach iced tea into cups with ice.
    Add thinly sliced peach wedges as optional garnish.

Notes

  • Garnish peach iced tea with thinly sliced peach wedges. Line cups with a couple of peach wedges, fill cup with ice, then pour in peach iced tea.
  • To replace tea sachets with loose tea, use 1 tablespoon of loose English breakfast and 1 ½ teaspoons of Earl Grey.
  • Any black tea will work great for this peach iced tea. You can use just Earl Grey or English breakfast tea.
  • Don't want to make peach syrup from scratch? Use store-bought peach juice! Add 2 cups of peach juice to the pitcher with tea. 
  • Make sure your pitcher can handle high heat if you're steeping tea directly in it.
  • Instead of pureeing the peaches, you can dice them into small pieces and mash them in the saucepan. Cook on the stovetop 10 minutes longer if you do this. I puree the peaches to shorten the cooking time on the stove.
  • The drink already is sweetened but if you want to add more, use simple syrup to make sure it fully mixes in with the iced tea.
  • Peach iced tea can be stored in the refrigerator for up to 4 days.
  • Add ice to the cups instead of in the pitcher with the iced tea so that the iced tea doesn't get watered down.
