Blue Cheese and Pear Tea Sandwiches

- 4 slices white bread
- 2 tablespoons crumbled blue cheese (at room temperature)
- 2 tablespoons unsalted butter (at room temperature)
- 3 tablespoons finely chopped walnuts (about 10 walnuts)
- 1 teaspoon chopped parsley (plus more for garnish)
- 12 slices thinly-cut pear (about 1/4 of a pear)
- 4 bite-sized tea sandwiches can serve 1-2 people.
- It’s best to use a sandwich bread that isn’t too thick.
- Any crumbled blue cheese works for this recipe.
- Choose a high-quality unsalted butter. Both the blue cheese and unsalted butter should be at room temperature for easy mixing. If both are still cold, it’ll be difficult to combine them into a spreadable filling.
- Anjou pear has a subtle sweetness and citrus flavor that pairs nicely with blue cheese. To check for ripeness, press down gently near the neck of the pear.
- Avoid using salted walnuts, which may make the sandwiches too salty. Finely chop them so you get small pieces with every bite. You can also use toasted walnuts, which adds a nice nutty aroma and extra crunch.
- Look for fresh parsley with crisp leaves in a deep green color.
- Tea sandwiches are traditionally enjoyed at room temperature and not cold so it’s best make these just ahead of serving.
