Ingredients

Instructions

  • Make the strawberry cream cheese spread by mixing together softened cream cheese, strawberry powder, sugar, and lemon juice in a bowl.
  • Cut 4 hearts out of the bread using a heart-shaped cookie cutter.
Avoid the cutting the crust. Set aside these 4 heart bread pieces, which won't get any strawberry cream cheese on them. These are the 4 bread pieces that will top each tea sandwich.
  • On a slice of bread, spread a layer of the strawberry cream cheese. Use the heart cookie cutter to cut out heart shapes out of the bread. Repeat to create 8 more.
    Avoid cutting the crust.
  • Assemble the sandwich.
Place bread with strawberry filling on top of another strawberry filled bread. Place bread without strawberry filling on top.
  • Repeat until you make 4 tea sandwiches.

Notes

  • If you don't have strawberry powder, you can use freeze-dried strawberries and crush them in a ziplock bag using a rolling pin or heavy bottle. Feel free to use any red-colored powder, like raspberry if you prefer them over strawberry.
You can use cookie cutters in other shapes, but it’s best to go with a simple shape.
  • Freeze bread to get the cleanest cuts with the cookie cutter.
  • Tea sandwiches are meant to be eaten in 2 bites, so don't make them too big if they're to be served at tea time.
  • These tea sandwiches are great for making ahead of time since the strawberry spread won't get the bread soggy. Make the sandwiches and store them overnight in the refrigerator. Loosely cover the sandwiches with wax paper and a damp paper towel in an airtight container. Don’t let the damp paper towel touch the sandwiches. The damp paper towel will help prevent the bread from drying out.
