Cucumber Lemonade
- ¼ cup hot water
- 4 teaspoons sugar
- ½ cup cold water
- 3 tablespoons lemon juice
- ⅔ cup fresh cucumber diced
- 1 cup ice
Make the simple syrup.Add sugar to hot water and stir until the sugar fully dissolves. Blend simple syrup, cold water, lemon juice, and cucumbers.Blend on low for 30 seconds. Strain the cucumber lemonade.Place a mesh strainer on top of a cup. Pour the cucumber lemonade through the strainer to remove the solids. Pour the cucumber lemonade in a cup with ice.Optional: Garnish with lemon slices or cucumber slices.
- Look for cucumbers with smooth and dark green skin without any mushy spots.
- For the best flavor, use fresh lemon juice. A citrus juicer will make squeezing lemons easy.
- Skip the simple syrup if you want a less sweet drink.
- The ice will water down the cucumber lemonade, so drink it right after making it.
- You can store this cucumber lemonade for 2 days in the fridge. Wait to add the ice until you're ready to serve it.
- One trick if you don't have a blender is to grate the cucumber and shake it in a cocktail shaker (or any airtight container) with the rest of the ingredients except the ice. Strain and pour into a cup with ice.
