Jasmine Bubble Tea

Make tea. Boil 1 cup of water.If using an electric kettle with a temperature setting, set the water to 175°F. Use filtered water if possible. Steep tea sachets in hot water for 4 minutes. Discard tea sachets and stir in sugar. Let tea cool. Make tapioca balls. Boil water and add tapioca balls.Boil water in a saucepan on the stovetop then add tapioca balls. Cook on medium-high heat for 8-10 minutes. Stir occasionally. Tapioca balls should be soft all the way through.(Follow directions on your tapioca ball packaging if you're using a different brand than the one I’m using.) Strain tapioca balls.
Assemble the drink. Put tapioca balls into a cup. Add ice, tea, and milk.Use an extra wide straw to drink.
- The jasmine green tea can be prepared ahead of time and stored in the refrigerator for up to 4 days.
- Bubble tea is best when it's made and served immediately when the tapioca balls are still quite warm. Once the tapioca balls start to cool down, they'll harden.
- If you prefer weaker tea, use 1 tea sachet instead of two.
- Bubble tea is served with a wide straw so that each sip you'll get tapioca balls and the tea.
