Matcha Ginger Beer Mocktail

- 1 bottle ginger beer
- 1 teaspoon matcha
Sift matcha using a mesh strainer into a bowl. Sifting matcha is key to preventing clumps. Add 4 tablespoons of ginger beer into the sifted matcha and mix to create a matcha concentrate. If you don't have a matcha whisk, use a spoon to mix. No need to vigorously whisk for this. Just a slow, half circle motion is enough to mix the matcha with the ginger beer. Pour matcha concentrate into a tall glass. Top with ginger beer. It'll fizz right away so pour slowly. Once you stop pouring the ginger beer, the drink will start to settle a bit with the bottom becoming increasingly more green.
- Get matcha that's a bright green in the $35-50 range. The better the matcha quality, the brighter the green. The bright green in this drink is really what makes it stand out so avoid matcha under $20, which will give you a dull green color.
- If you don't have ginger beer, you can use ginger ale.
