Butterfly Pea Flower Syrup

This vibrant blue syrup gets its color from caffeine-free butterfly pea flower tea. It's simple to make with only 3 ingredients.

Instructions

  • Put all ingredients in a saucepan and simmer for 5 minutes.
    Stir to make sure sugar dissolves completely.
  • Turn off the heat and let cool.
  • Remove tea bag and pour syrup into an airtight container.
    Use a funnel to help pour neatly into the bottle. The syrup will keep for up to 2 weeks in the refrigerator.

Notes

  • Using white sugar preserves the bright blue color. You can use brown sugar, but it will muddle the color.
  • When making simple syrups, tea bags create far less mess and makes it easy to strain.
  • This recipe makes 1 cup of syrup. That's enough to sweeten 8 drinks if you use 2 tablespoons for each glass.
