Ingredient Notes

Butterfly Pea Flower Syrup ingredients in measuring cups and labeled.
  • Butterfly pea flower tea: Instead of loose tea, go for butterfly pea flowers in tea bags since they’re easier to use. You don’t need high quality tea to make this syrup.
  • Sugar: Using white sugar preserves the bright blue color. You can use brown sugar, but it will muddle the color.
  • Water: Filtered water is what I always recommend since it makes a better tasting syrup.

Easy peasy! I used butterfly pea flower powder, which requires quite a bit of stirring/un-chunking, but to wonderful effect as well. Great for mocktail pizzazz. Used in faux-gin and elderflower tonic with a splash of lemon, and cucumber slice on rim.
