Homemade Gingerbread Syrup

Gingerbread syrup is a delicious way to sweeten your drinks. The warm, sweet, and spicy flavors bring back memories of the holidays and biting into fresh gingerbread cookies.

Add the syrup to espresso drinks to make a gingerbread latte. Add it to tea, hot chocolate, or any drink you like to flavor it with gingerbread. You can even use it to add festive flavor to pancakes or French toast in place of maple syrup.

Note from Jee

My gingerbread syrup recipe uses fresh ginger, which gives it a much better flavor than using ground ginger.

A shortcut I used to make this syrup is in using whole allspice berries instead of a bunch of different spices. I saved money doing this (no need to get a whole bunch of spices I’ll use once or twice) but didn’t sacrifice on taste. The syrup tastes great!

Recipe Summary

  • This gingerbread syrup is easy to make in 6 minutes with only 4 ingredients. All you need is water, dark brown sugar, fresh ginger, and whole allspice berries.
  • There is no need for cinnamon, cloves, or nutmeg in this recipe since allspice adds a ton of spicy-sweet gingerbread flavor.
  • This recipe makes 1 cup of gingerbread syrup, which is 16 tablespoons. Use 1-2 tablespoons of syrup to sweeten each cup of coffee.

Ingredient Notes

Ingredients to make gingerbread syrup, labeled.
  • Allspice berries: Whole allspice berries infuse a spicy-sweetness that tastes like cinnamon, cloves, and nutmeg.
  • Fresh ginger: Ginger adds a spicy kick. You can also use frozen ginger. You’ll need 3 inches of ginger that has been minced.
  • Dark brown sugar: This gives the syrup a richer, caramel-like flavor and color.
  • Water: Use filtered water for the best flavor.

Step 2: Strain the syrup into a bottle to filter out any ginger or allspice solids from the liquid.

Expert Tips

  • Fresh minced ginger gives the syrup the perfect spicy flavor. Store-bought ground ginger cannot achieve the same taste.
  • The funnel allows the syrup to flow directly into the bottleneck without making a mess. Place a mesh filter on top of the funnel to prevent any ginger or allspice berries from getting into the bottle.
  • Allow the syrup to cool before bottling. Straining boiling hot syrup into an airtight bottle is dangerous and may warp your tools or container.
