Cold Foam

My trick to making any iced drink decadent is by topping it off with cold foam. And with my cold foam shortcut, it can be made in about a minute with just 2 ingredients.

Cold foam is frothed milk that’s made without heat or steam. It’s a creamy, velvety, and so fluffy.

Even before Starbucks came out with cold foam, I was making something very similar that I called “milk cloud” where I made a pourable whipped cream with a sugar and a pinch of salt.

Once Starbucks came out with their cold foam, I studied their recipe and came up with this shortcut version that uses half & half. Half & half is half cream and half milk and it’s found in the dairy case next to the milk.

Ingredient Notes

  • Half & Half: Half cream and half milk, the cream half is the key to getting perfect cold foam. Milk can be made into cold foam but it’ll be thin and not very fluffy.
  • Sugar: I use white or cane sugar but you can also use simple syrup. Avoid using turbinado sugar which is bigger and harder to dissolve.

How to Make Cold Foam

Whisk half & half and sugar using a handheld milk frother until it doubles in volume. It should take about 20 seconds. You want it to be pourable so don’t whisk for too long. It’s ready to be poured onto an iced drink immediately.

Ingredients 

  • ¼ cup half & half
  • 2 teaspoons sugar

Instructions 

  • Put half & half and sugar into a tall container.
  • Whisk half & half and sugar using a handheld milk frother until it doubles in volume.
    This should take about 20 seconds. You want it to be pourable so don't whisk for too long.
  • Pour cold foam on top of an iced drink.
    Serve immediately.
