As a Tea Sommelier, I use different teapots depending on the tea and I use glass teapots for herbal teas. I can watch the color change and the flowers or buds opening up in the hot water.
I use glass teapots less when I’m making black tea or oolong tea since the glass doesn’t retain heat as well, making the water temperature fluctuate during the steeping process. Instead, I recommend using ceramic or porcelain teapots since they do a better job of keeping the water hot.
Gooseneck spouts make pouring easier. Glass teapots with a long spout gives you more control over the pour.
Infusers should be easy to remove. Infusers are for making loose tea and they’re not needed with tea bags. When making loose tea, the infusers should be removed after the steep so that the tea doesn’t oversteep and get bitter.
Bigger the infuser, the better. It’s best to let loose tea steep in a big infuser, to allow plenty of room for the leaves to unfurl. Look for an infuser that fills up most of the teapot.
