Jam-packed with flavor, these tea sandwiches are perfect with a pot of black tea. A combination of turkey, almond, and tarragon makes this absolutely delicious.

Turkey Tarragon Tea Sandwiches
These turkey and tarragon tea sandwiches are so good! The turkey makes the sandwich hearty, the tarragon adds a little licorice-like flavor, and the almonds give it a nice crunch. These tea sandwiches are like a turkey salad but dressed up.
There’s no cooking involved. Just chop up the ingredients and assemble the sandwiches for a delicious tea time. What’s also great is that it’s one of those tea sandwiches where you can make the filling ahead of time without sacrificing the quality.

Ingredient Notes
- Whole wheat sandwich bread: Whole wheat was used in this recipe and it contrasts nicely with the filling but you can use white bread if you like.
- Roasted Turkey: The turkey needs to be finely chopped so you can buy any kind of roasted turkey. If you have leftover turkey from the holidays, this is a great way to use that up. Roasted chicken also works if you don’t have turkey.
- Smoked almonds: These can be found in the nut aisle at your supermarket. They’re sold in bags or cans.
- Fresh tarragon: Tarragon is a green herb with a subtle licorice/anise flavor. You can find it in the herb section of the supermarket.
- Shallot: This gives the sandwich a little acid to balance the richness.
- Mayo: Use olive oil mayo or for a little more tang, I like to use Japanese Kewpie mayo.
- Ground black pepper: To season the sandwich.

Step-by-Step Instructions
Step 1: Mix chopped turkey, chopped almonds, mayo, chopped shallot, chopped tarragon, and pepper in a large bowl.
Step 2: Roughly divide the filling into 4 portions, then place 4 slices of bread on a work surface.
Step 3: Pack one portion of the filling evenly on top of each of 4 slices of bread, filling in the edges.
Step 4: Top with another slice of bread, then use a serrated knife to cut off the crusts.
Step 5: Cut the large sandwich into three equal sized sandwiches.
