Ripe peaches and oolong tea are a delicious pairing and they’re even better cold brewed. Rosemary and a little lime round out the flavors in this refreshing drink.

Peach Cold Brew Oolong Tea

I love pairing oolong tea with stone fruits like peaches and plums, so naturally, it was the first fruit I thought of for this cold brew tea.

Cold brew tea is mellower and smoother than regular iced tea, which is hot tea cooled down. Cold brew is a slower brewing process and takes 12-24 hours in the refrigerator to extract the flavor from the tea leaves.

My Fruit-Infused Cold Brew Tea Formula

Here is my cold brew tea formula that I use as a guideline.

Tea + 1 Fruit + 1 Citrus + 1 Herb

For this cold brew, I used oolong tea as my tea, peach as my fruit, lime as my citrus, and rosemary as my herb.

Recipe Notes

Use just a little lime.
A little lime goes a long way. If you want to make sure the cold brew is not at all bitter, take the rind off the lime slice.

Wash the fruit, including the lime.
Thoroughly wash all fruit to remove dirt and bacteria. To clean the lime, rinse it under cold running water and rub it with your hands. Don’t use dish soap.

Strain out solids after 24 hours.
Make sure you take it out all solids after 24 hours. Leaving any solids in the cold brew tea can accelerate bacterial growth.

Drink cold brew tea within 3 days.
Fruit-infused cold brew is best when consumed in 3 days after straining the solids since there is increased risk of bacterial growth. From the day you put the cold brew tea and fruit into the refrigerator to the day you have your last sip, it should be 4 days total.

Use filtered water.
I always use filtered water to make tea since better water means a better tasting tea.

Peach Cold Brew Oolong Tea

Cold brewed oolong tea with fresh peach.
Prep Time: 3 minutes
Total Time: 12 hours 3 minutes
Yield: 3 servings

Ingredients 

  • 1 ½ tablespoons oolong tea, (or 3 tea bags/sachets)
  • 1 peach, sliced
  • 2 slices lime
  • 2 sprigs fresh rosemary
  • 3 cups water, cold or room temperature

Instructions 

  • In a pitcher, combine all ingredients. Cover and refrigerate for 12-24 hours.
    Stir to make sure the tea leaves touch the water.
  • Use a strainer to remove all solids.
    The tea, fruits, and rosemary should not be left in the drink more than 24 hours.
  • Serve with or without ice.
    The tea can be stored in the refrigerator for up to 3 days.
